Method4 steps
Step 1: Heat oil (2 tablespoons) in a large pot over medium heat. Add the onion (1) and cook, stirring occasionally, until tender and beginning to brown, about 5 minutes. Add ham, marjoram, ginger (½ teaspoon) and allspice (¼ teaspoon) and cook for an additional minute.
Step 2: Add the picked-over rinsed yellow split peas (2 cups), carrots (2), 4 cups broth, 3 cups initial water, ¼ tsp baking soda and bay leaf (1) to the aromatic base. Bring to a boil, then reduce to a simmer for about 35 minutes until peas are nearly tender.
Step 3: Mash the nearly tender peas with a potato masher or fork. Continue simmering 10–15 minutes until the peas are very soft, adding only a little additional water as needed if too thick.
Step 4: Remove and discard the bay leaf already in the soup. Add the juice of ½ lemon, season with salt and pepper to taste, and serve with optional additional fresh parsley. Do not add another bay leaf or the measured fresh marjoram/thyme again.
