Step 1: Put the beef strips in a bowl with the marinade soy sauce (2 tsp), sake (2 tsp) and cornstarch (1 tbsp). Mix until all the strips are coated.
Step 2: In a separate bowl, mix the sauce sake (1½ tbsp), soy sauce (1 tbsp), sugar (1 tsp), oyster sauce (1 tsp) and cornstarch (1 tbsp) until evenly combined.
Step 3: Heat 1 tbsp of the oil in a wok or large frying pan over high heat.
Step 4: Add the capsicum strips and bamboo shoot sticks. Stir-fry for about 2 minutes, until the capsicum softens, then transfer to a paper-towel-lined plate.
Step 5: Reduce the heat to medium and add the remaining ½ tbsp oil to the wok or pan.
Step 6: Add the marinated beef to the pan. Separate any strips that stick together as you stir-fry.
Step 7: Continue cooking the beef for about 2 minutes, until browned and almost cooked through.
Step 8: Return the cooked capsicum and bamboo shoots to the beef and stir to combine.
Step 9: Stir the sauce again to disperse the starch, then pour it into the pan. Stir until the sauce thickens and the beef is cooked through.
Step 10: Turn off the heat and serve immediately, divided into two or three portions.
