Method5 steps
Step 1: Wash the sticky rice in cold water about 5 times, or until the water runs clear. Soak in fresh water at least 4 hours or overnight, then drain very well.
Step 2: Steam the soaked rice 20–25 minutes until cooked. While it steams, combine the ⅔ cup rice coconut milk, ⅓ cup sugar and ½ tsp salt in a small pot. Warm over medium heat, stirring just until the sugar dissolves, then keep covered and warm until the rice is ready.
Step 3: Immediately pour the warm rice coconut syrup over the steamed rice in a bowl. Stir and break up lumps, then cover and let absorb at least 40 minutes. After 20 minutes, fold the bottom rice up to distribute the syrup evenly.
Step 4: Combine the coconut milk (1 ½ cup), sugar and salt (¼ tsp) in a small pot. Cook the syrup over medium heat until the sugar is completely dissolved, and the coconut milk comes to a boil. Turn off the heat then add chunks of durian meat into the hot syrup and let it sit and infuse, covered, for another 20 minutes or so before serving.
Step 5: For a more cooked durian texture, briefly simmer the durian in its coconut broth instead of only steeping it. Serve the coconut sticky rice with the infused durian broth and flesh. Refrigerate leftovers promptly.
