Method6 steps · about 35 min

  1. Step 1: Clean the 500 g whole sardines: remove heads, entrails and backbones and rinse away waste to obtain about 200 g cleaned fish. Trim the broccoli (400 g) into florets, obtaining about 200 g from the whole 400 g.

    Uses 400 g broccoli · 500 g fresh sardines

  2. Step 2: Cut the prepared broccoli florets into small pieces, rinse and set aside. Peel and slice the red onion (1) and dice the semi-aged pecorino.

    Uses 1 red onion · 100 g Pecorino Romano PDO · about 200 g florets from 400 g whole broccoli

  3. Step 3: Heat olive oil with the garlic (2 clove) and chili over low heat for a couple of minutes. Add the prepared sliced onion and cook over moderate heat for about 10 minutes until soft, then remove the garlic. Meanwhile, bring a separate pot of salted water to a boil.

Soften sliced red onion · 10 minUses Extra virgin olive oil to taste · 2 clove garlic · 1 fresh chili pepper · Fine salt to taste · separate pasta boiling water; reserve ladles for sauce · one peeled thinly sliced red onion

  4. Step 4: Add the prepared cleaned sardines to the softened onion and sauté over medium-high heat for 3–4 minutes. Add the prepared cut broccoli. Meanwhile, cook the pennette in the boiling salted water until 3 minutes before the package cooking time.

Uses 320 g five-grain pennette rigate · about 200 g cleaned boneless sardines from 500 g whole fish · about 200 g washed florets cut small · onion softened 10 minutes in garlic chili oil, garlic removed · separate salted boiling pot water

  5. Step 5: Continue cooking the sardine and broccoli sauce, adding pasta cooking water as needed. Season with salt and black pepper (to taste). Transfer the partly cooked pasta to the sauce with a ladle of cooking water and finish cooking for another 3 minutes, until tender.

Finish pasta in sauce · 3 minUses Black pepper to taste · Fine salt to taste · 320 g pasta drained 3 minutes before package cooking time · cleaned sardines sauteed 3–4 minutes with onion then broccoli added · ladles of same pasta water for sauce and finishing

  6. Step 6: Turn off the heat and add the prepared pecorino cubes. Cover and rest for 1 minute, then mix and serve immediately.
