Step 1: Soak the 1 cup urad dal in separate water for 3 hours, then drain. Meanwhile, pressure cook the ½ cup toor dal, tomato (1), turmeric (0.25 tsp) and its 1½ cups water for about 5 whistles according to your cooker instructions, until soft. Let pressure release fully before opening.
Step 2: Grind the drained urad dal into a thick, fluffy paste, using about 4 tbsp water and adding only enough for a thick paste. Beat the paste in a bowl to incorporate air. Mix in the 2 green chillies, chopped ginger (1 piece), curry leaves, fresh coriander (2 tbsp), dried coconut (1 tbsp), hing, rice flour (2 tbsp) and ½ tsp salt reserved for the vada.
Step 3: Heat the deep-frying oil over medium heat. With wet hands, form small rounds of batter with a hole in the centre. Carefully lower into the oil and fry on both sides until golden brown, crisp and cooked through. Drain.
Step 4: For sambar, heat 3 tsp oil with the mustard, sambar hing, dried red chilli (1) and sambar curry leaves. Add the 2 slit green chillies and half onion reserved for the sambar and saute for 1 minute.
Step 5: Add the tamarind extract (½ cup), jaggery (½ tsp) and 1 tsp sambar salt. Simmer for 10 minutes until the tamarind is cooked.
Step 6: Whisk the cooked toor dal and tomato smooth, then stir into the tamarind base.
Step 7: Add the separate 1½ cups water to adjust sambar consistency and bring to a boil. Stir in the sambar powder (1 tbsp).
Step 8: Add the 1 tbsp ghee and boil for 2 minutes. Keep the finished sambar hot.
Step 9: Put the fried vada in warm water with ¼ tsp salt. Soak for 10 minutes, until the vada absorb water, then gently squeeze out excess water and place on serving plates.
Step 10: Pour the hot sambar over the drained vada just before serving. Top with a little chopped onion if desired.
