  1. Step 1: Rinse the 2 cups white rice three times with fresh water, draining each time. Add the authored 2 cups cooking water to the drained rice and run your rice cooker’s white-rice program until tender; the source estimates about 30–45 minutes. Follow your model and rice variety’s instructions if its water needs differ. If still firm after water is absorbed, add a little hot water and continue covered until tender. Prepare the remaining ingredients while it cooks.

  2. Step 2: Cut chicken (3 oz): Cut the chicken in three stages:; into thin strips; into thinner slices; into small pieces; Place the chicken into a bowl for the next step.

  4. Step 4: Mince ginger (2 oz): Now, let's prepare our almighty ginger!; As I mentioned, you don't need to peel the skin on as long as you wash the ginger thoroughly.; Similar to the chicken, we cut the ginger into thin slices, then thin strips, and finally into small bits.

Uses 2 oz ginger, finely minced

  5. Step 5: Cut green onion (2 stalks): Chop the green onion into small pieces, about 1/2 to 1 cm long. The green onion gives the dish more flavor and fragrance.

  7. Step 7: When the rice is about 4–5 minutes from ready, heat the wok on high. Add 1 tbsp of the divided oil (1 tbsp) and swirl to coat. Pour in the prepared eggs and stir constantly for 45–60 seconds, until partly set. Transfer to a bowl; immediately continue cooking and return them later to finish.

  10. Step 10: Add rice to wok: Hopefully your rice is ready by now! Add the rice to the wok, and spread it out with a spatula and chopsticks. We don't want any clumps of rice here.; My dad is pretty "gentle" with the rice, not making any big or fast moves with his hands.; Cook for about 60 seconds before continuing.

  11. Step 11: Add the separate 1 tsp fried-rice salt (1 tsp) to the rice-and-chicken wok and stir about 30 seconds. Return the partly cooked eggs and gently mix for about 2 minutes, continuing as needed until chicken reaches 74°C in its centre and eggs are fully set.
