Method3 steps

  1. Step 1: Pat all 1 lb chicken wingettes dry. Pound the peeled 2-inch piece of ginger in a mortar and pestle, then squeeze out its juice. Mix all the extracted juice with the full ¼ tsp each turmeric and chili powder (¼ tsp), 1 tbsp soy sauce, 1 tbsp honey and one pinch salt. Coat all the wingettes evenly with this marinade, cover and refrigerate for 1–2 hours. Keep the marinated chicken cold until ready to bake.

Refrigerated wing marinade · 60 minUses One 2-inch piece ginger, peeled, for extracting juice · 1 lb chicken wingettes, about 10–12 pieces · ¼ tsp turmeric powder · ¼ tsp chili powder · 1 tbsp soy sauce · 1 tbsp honey · 1 pinch salt

Raw wingettes coated with the ginger, honey and spice marinade.
  2. Step 2: Choose the oven-baked route. Preheat the oven to 375°F (190°C). Arrange all the marinated wingettes from step 1 on a wire rack over a baking sheet, leaving space between pieces. Bake for 20–25 minutes, then check the thickest meat away from bone for 74°C (165°F) and golden cooked skin. Continue baking as needed to reach that actual cooked endpoint. Discard leftover raw-chicken marinade.
