Method10 steps · about 35 min
Step 1: Preheat the oven to 375°F (191°C). Grease a 9 x 9 inch (23 x 23 cm) baking pan with separate pan-greasing fat and line with parchment.
Step 2: Use a food processor, or a large bowl with a pastry blender or your fingertips for cutting in the butter. Follow the same ingredient sequence with either method.
Step 3: Combine the flour (1 3/4 cups), chosen custard powder or instant-pudding alternative, sugar (1/2 cup), baking powder (3 teaspoon) and salt (1/4 teaspoon). Use one custard option, not both.
Step 4: Cut in the butter (1/2 cup) until mixture resembles a coarse meal.
Step 5: Transfer to a large bowl and toss in the optional raisins (1 cup) if using.
Step 6: Make a well in the center of the dry mix.
Step 7: Mix the lemon juice (1 tablespoon) and undiluted evaporated milk (2/3 cup), with the optional vanilla extract (1 1/2 teaspoon) if using custard powder. Omit the optional vanilla when substituting instant vanilla pudding mix.
Step 8: Pour into the well and mix only enough to form a dough ball.
Step 9: Roll the dough 1 1/4 inches (3.2 cm) thick and cut about sixteen buns with a 2-inch (5 cm) biscuit cutter. Place in the prepared 9 x 9 inch pan. If desired, brush the tops with the optional beaten egg wash shown in the source photos.
Step 10: Bake at 375 degrees F for 20-25 minutes or until golden brown.
