Method9 steps
Step 1: Cut the vegetables and beef (500 g) into bite-sized pieces. Use the beef chunk size specified in your pressure-cooker manufacturer’s beef stew or curry guidance, and select the corresponding cooking-at-pressure duration before starting.
Step 2: Heat the butter (30 g) over medium heat in a pressure cooker.
Step 3: Add the prepared beef and vegetables to the melted butter and sauté until the beef is browned and the vegetables are coated.
Step 4: Add the 1 litre water and scrape any browned bits from the base. Close and seal the pressure-cooker lid according to its instructions, staying within its fill limits.
Step 5: Bring the cooker to its working pressure, then pressure cook for the duration specified by its manufacturer for your beef cut and chunk size. Time spent reaching pressure is separate from cooking at pressure. Choose that duration for the timer.
Step 6: Remove the cooker from the heat, or turn it off. Depressurise fully following its instructions before opening; never open a pressurised cooker. Check that the beef and vegetables are tender, and continue cooking the thin broth if needed before adding the roux. Once tender and depressurised, break the measured Japanese curry roux into chunks and add it off the heat.
Step 7: Stir until all the curry sauce mix has dissolved.
Step 8: With the lid off, return the curry to low heat. Bring it to a gentle boil, then simmer, stirring often, until the sauce thickens. Keep this thickened roux sauce out of the pressure-cooking cycle.
Step 9: Serve over cooked rice.
