Step 1: Wash the five whole fruits under running water and dry them thoroughly with a clean towel. If scoring helps with peeling, lightly score the peel from the top to about two thirds of the way down. Cut only the skin: avoid cutting into the flesh or wetting the peel with juice.
Step 4: Spread the scraped peels on a clean sheet pan in a sunny, dry place with good air movement. A sunny windowsill is the author’s indoor option. For outdoor fruit drying, use hot, dry, breezy weather of at least 85°F/about 29°C, ideally below 60% humidity; protect the peels from birds and insects with a clean food-safe screen or cheesecloth and bring them under shelter at night. Turn the peels once a day. The author’s guide is about five days, but weather changes the drying time: keep drying until every piece is completely hard and crisp, with no soft or moist areas. Store only the fully dried peels in a clean airtight container.
