  1. Step 1: Wash the six to eight limes. Finely zest two of these limes and reserve the zest, then juice the full batch. Stir the tartaric acid (2 teaspoons) into the juice. The source expects about 200–250 ml juice from roughly 500 grams limes.

Uses 6–8 limes (about 500 g total; source expected juice 200–250 ml) · 2 teaspoons tartaric acid

  2. Step 2: Keep the reserved fine zest from two of the limes ready for the sugar syrup.

  3. Step 3: Add sugar (2 1/2 cups), zest and water (2 cups) to a saucepan. Stir over medium-high heat until the sugar dissolves and the mixture is about to boil. This should take about 5 minutes. Remove mixture immediately from heat.

Uses Reserved lime zest · 2 1/2 cups caster sugar or white sugar · 2 cups water

  4. Step 4: Let the sugar syrup cool for fifteen minutes, then pour it over the prepared lime-juice mixture and stir.

  5. Step 5: Leave the combined cordial to cool for another fifteen minutes. Strain through clean muslin, taking care if still hot, into a clean sanitised food-safe bottle. Close and refrigerate. The source batch is about 850 ml; serve diluted with four or five parts water per one part cordial.
