  1. Step 1: Whisk all ¾ cup gluten-free flour blend, ½ cup tapioca starch, ½ cup glutinous rice flour and 1½ tsp xanthan gum together in a large bowl.

  2. Step 2: Sprinkle all ⅔ cup cool or room-temperature dough water (⅔ cup) evenly over the dry mixture from step 1. Mix with a rubber spatula until the dough comes together, then knead by hand until smooth.

  3. Step 3: Cut the smooth dough from step 2 into four portions. Keep three tightly covered while rolling one portion into a 6-inch log. Cut the log in half, then each half into thirds to make six pieces. Repeat with the other three portions, keeping all pieces covered until rolling; this produces about two dozen wrappers.

  4. Step 4: Set out a wooden or bamboo board and a rolling pin. Have a little extra tapioca starch for dusting, a small bowl of clean sealing water and a chosen separately prepared gluten-free dumpling filling ready. Keep raw filling refrigerated and bring out small portions for assembly; its ingredients determine the final cooking endpoint.

  5. Step 5: Take one covered dough piece from step 3 and roll it into a circle about 4 inches (10 cm) across and ⅛ inch (3 mm) thick. Use a little of the extra dusting starch from step 4 only if needed. Keep all other dough covered and fill this wrapper immediately in step 6.

  6. Step 6: Moisten the perimeter of the wrapper from step 5 with a little sealing water from step 4. Put about 1 heaped tbsp of the chosen filling from step 4 in its center. Fold the circle in half, pinch the center together, then pleat and seal both sides firmly. Put the dumpling on a parchment-lined tray and keep it covered.

  7. Step 7: Repeat steps 5–6 with the remaining covered dough from step 3, using the filling, sealing water and dusting starch from step 4 as needed. Roll each wrapper just before filling it. Keep completed dumplings covered on a parchment-lined tray. Stop if either dough or filling runs out; keep unused filling refrigerated.

  8. Step 8: Cook the assembled dumplings from step 7 fresh, or freeze them promptly on their covered parchment-lined tray without touching. Freeze until solid, then bag them for up to about 2 months for best quality; cook directly from frozen without thawing. Choose ONE cooking route: boiling steps 9–12, pan-frying steps 13–16, or steaming steps 17–20. For every route, the filling must be fully cooked for its ingredients; ground-meat fillings need 71°C, or 74°C for poultry.
