Step 1: Whisk ⅓ cup soy sauce, ¼ cup sugar, ¼ cup mirin, ½ cup water and 2 tablespoons cornstarch together in a pot until smooth. Heat over medium heat, stirring, until boiling, then boil for 1 minute until very thick. Set this teriyaki sauce aside.
Step 2: Mix the 1 lb ground beef with ½ teaspoon salt and pepper to taste. Divide into 4 equal portions and form patties about 4 inches (10 cm) across.
Step 3: Heat a skillet over medium-high heat and add enough oil to coat the pan. Add the prepared patties and fry for about 2–3 minutes per side, then check the thickest centre of each with a food thermometer. Continue cooking as needed until each reaches 71°C (160°F).
Step 4: Split the 4 buns. Put one fully cooked patty on each bottom half and spoon the thick teriyaki sauce over the meat. Divide the 1 sliced tomato, ½ thinly sliced onion and ½ cup shredded lettuce among the burgers. Drizzle with Japanese mayonnaise if desired, then close with the top halves and serve.
