Method6 steps · about 30 min
Step 1: Whisk the yogurt (150 g) and medium egg (1) together. Add the 80 g gluten-free buckwheat flour and 40 g potato starch and mix.
Step 2: Add batter salt to taste (to taste), gradually mix in the milk (20 g) and then mix in the gluten-free baking powder (2 g).
Step 3: Melt a little butter (to taste) in a pan. Spoon small ladles of batter into approximately 6 cm (2.5 inch) rounds, leaving space between them. Cook for about 1 minute each side until set, flipping the first poured blinis first. Repeat to make about 18 blinis.
Step 4: Arrange the cooked blinis on a serving plate. Reserve two chive stalks for garnish and chop the other six. Mix the fresh goat cheese (100 g) with the chopped chives, a little olive oil and lime (1) juice, reserving some peel from the same lime.
Step 5: Season the goat cheese mixture with the separate filling salt to taste (to taste). Cut the reserved lime peel into thin strips.
Step 6: Spread the cooked blinis with goat cheese cream, top with smoked tuna (100 g) and garnish with lime peel strips and the two reserved chive stalks.
