Method8 steps
Step 1: Mix the 3 Tbsp soy sauce, 3 Tbsp white wine, 1 Tbsp mirin or cooking sake, 1 Tbsp extra virgin olive oil, chopped ginger (1 tsp) and optional sugar (1 tsp) to make the marinade.
Step 2: Trim excess fat from the bone-in (2 lb), skin-on chicken thighs or drumsticks and pierce the meat a few times with a knife.
Step 3: Coat the chicken thoroughly in the soy-ginger marinade. Cover and refrigerate for two hours.
Step 4: Preheat the oven to 350°F (175°C). Heat the 2 Tbsp pan oil in a heavy oven-safe pan or Dutch oven large enough for the chicken in a single layer, over medium-high heat. Lift the chicken from the marinade and sear skin-side down for 4–5 minutes or longer until golden, then turn and brown the other side for about four minutes. Set the chicken aside; discard any unused raw marinade.
Step 5: With the pan still hot, add onion (1) slices and lemon (1) slices.Cook until onions have wilted and brown bits on bottom of pan have loosened. 5-7 minutes. Turn heat off.
Step 6: Place chicken pieces, skin-side up on top of onion mixture. Pour juice of 1/2 lemon and 1 Tbs of sake or mirin.
Step 7: Cover the pan and transfer to the oven. Bake for 40–45 minutes, until the chicken is fully cooked and tender.
