Method7 steps
Step 1: Trim excess outer fat from the 1½ lb boneless lamb and cut into 1–1½-inch cubes. Put in a bowl and season with kosher salt and black pepper.
Step 2: Process the yellow onion (1 medium), 5 garlic cloves, 1 tsp allspice, ½ tsp nutmeg, ½ tsp cardamom, packed cup of parsley (1 cup), ⅓ cup olive oil and the lemon juice and zest until finely chopped into a thick marinade.
Step 3: Mix all the marinade from step 2 with the seasoned lamb from step 1. Cover and refrigerate for 2 hours.
Step 4: Prepare a clean grill and long metal skewers. Brush the cold grill grates lightly with cooking oil; leave the grill off while you thread the meat.
Step 5: Lift the lamb from the marinade in step 3, shake off the excess and thread onto the metal skewers with small spaces between pieces. Discard the leftover marinade that touched raw lamb.
Step 6: Heat the prepared grill from step 4 to high heat. Arrange the skewers from step 5 in a single layer. Watch closely and turn each skewer a quarter turn every couple of minutes, until browned on all sides. The grilling guide is about 7–9 minutes, but continue as needed until the thickest lamb pieces reach at least 63°C (145°F). Move to a clean platter.
Step 7: Rest the cooked lamb skewers from step 6 off the heat for at least 3 minutes before serving.
