Step 1: Wash and slice all the sugar snap peas (200 g) lengthways. Put all the medium rice noodles (125 g) in a large bowl and pour over enough boiling water to cover them. Add all the sliced peas and leave for four minutes, until the noodles have softened; follow the packet if they need longer to become tender.
Step 2: Drain the actual softened noodles and peas in a colander, rinse under cold running water until cool and drain again thoroughly. Put them in a bowl and toss with both teaspoons sesame oil (2 tsp).
Step 3: Trim, wash and thinly slice all four spring onions diagonally. Wash and roughly tear the fresh coriander (1 pack), check the hot-smoked salmon for bones and keep it in flakes. Peel and finely grate the garlic clove (1 large) and peel and coarsely grate the knob of ginger. Mix all the soy sauce (3 tbsp), honey, lemon juice (1 tbsp) and groundnut oil with the prepared garlic and ginger to make the dressing. Add the prepared spring onions, coriander and ready-to-eat salmon to the actual cooled noodle base, pour over all the dressing and toss together.
Step 4: Divide the finished noodle salad into two portions and serve with the optional pretzel or bread roll if wanted. Keep the salmon salad refrigerated if serving is delayed.
