Step 1: Wash the vegetables. Finely chop the garlic (1 clove), carrot (1), celery (0.5 stalk) and half onion.
Step 2: Remove tough parts from the lacinato kale (500 g) and savoy cabbage (500 g) and cut the leaves into strips.
Step 3: Stew the chopped carrot, garlic, onion and celery in a pan with 2 tablespoons olive oil and 2 teaspoons white wine over medium heat for about 5 minutes. Meanwhile, heat lightly salted water in a pot.
Step 4: Add the brown rice (240 g) and stir to coat with the soffritto. Deglaze with the remaining 2 teaspoons white wine.
Step 5: When the wine has evaporated, add the sliced lacinato kale and savoy cabbage and cover with hot lightly salted water.
Step 6: Cover and simmer over low heat for about 40 minutes until the rice and greens are tender, adding more hot water if needed. Remove from heat and stir in the remaining olive oil and grated vegetarian pecorino (4 tsp).
Step 7: Finish with black pepper (to taste), mix well and serve.
