Method7 steps
Step 1: Blend the complete marinade until smooth: 1 tbsp minced ginger, 4 tbsp minced garlic, 160 g peeled onion, 280 g grated apple, 1⅓ cups soy sauce, 10 tbsp dark brown sugar, 7 tbsp rice wine, 1 tbsp gochujang and ¼ tsp ground black pepper.
Step 2: Place the five bone-in pork loin chops in a large sealable container and coat them with all the blended marinade. Cover and refrigerate for at least 12 hours, overnight or longer as needed to develop flavour.
Step 3: Take the marinated pork chops out of the refrigerator 30 minutes before cooking. Keep them covered in a cool place while preparing a grill with direct and indirect heat zones.
Step 5: Close the grill lid and cook the seared chops slowly over indirect heat for about 15–20 minutes. Check the thickest part of each chop with a thermometer, avoiding the bone, and continue until at least 63°C / 145°F before the resting stage.
Step 6: Transfer the fully cooked pork chops to a clean metal plate, cover with aluminium foil and rest for 5 minutes before serving.
Step 7: Serve the rested pork chops, one chop per serving, optionally with ready grilled pineapple rings and red bell peppers.
