Step 1: Preheat the oven to 350°F. Choose a 2–3 quart casserole dish or a 10-inch cast-iron pan.
Step 2: Drain the firm tofu (1) block and cut it into 1-inch cubes or rectangular pieces. Arrange all the tofu across the bottom of the casserole dish or cast-iron pan.
Step 3: In a saucepan over medium heat, sauté the ground pork (1 lb) in its own rendered fat, breaking it apart, until browned and cooked through to 160°F.
Step 4: Add the sliced onion (1), all 6–8 sliced fresh shiitake mushrooms, and the drained chopped water chestnuts (1 can) to the cooked pork. Sauté for 3–4 minutes, stirring, until the onion softens.
Step 5: Add the 2 tbsp soy sauce, 1 tbsp sake and 1 tbsp mirin to the pork-vegetable mixture. Stir and cook over medium heat for 1 more minute, coating the mixture with the seasonings.
Step 6: Spread the entire cooked pork-vegetable mixture evenly over the tofu already arranged in the baking dish.
Step 7: Beat 3 eggs for a smaller pan, or 4–5 eggs for a larger, shallower pan. Pour the beaten eggs evenly over the assembled pork and tofu so the top is coated.
Step 8: Sprinkle both chopped green-onion (2 stalks) stalks evenly over the egg-topped casserole.
Step 9: Cover the pan with foil and bake at 350°F for about 30 minutes. Check that the eggs are set and the center of the casserole reaches 165°F; continue baking under the foil if needed.
Step 10: Remove the casserole from the oven and let it rest for 5 minutes to make slicing easier. Slice and serve hot with the cooked rice. Refrigerate leftovers promptly for 2–3 days; reheat in the microwave, steamer, or covered 350°F oven until the center reaches 165°F.
