Step 1: Trim the ends of all 8 oz green beans, rinse in separate rinsing water and drain well. Set these prepared beans aside.
Step 2: In a saucepan, whisk together the complete sauce batch: all ½ cup creamy peanut butter, ¾ cup coconut milk, 2 tbsp Thai red curry paste, 2 tbsp apple cider vinegar, 1 tbsp sugar, 2 tbsp sauce ground peanuts and salt to taste. Put the pan over low heat and keep whisking until the ingredients combine smoothly. Keep the separate optional garnish peanuts for serving.
Step 4: Heat all 1 tbsp cooking oil in a pan and sauté all the minced garlic (2 cloves) until lightly browned. Add all the trimmed, rinsed and drained beans from step 1 and stir continuously until tender. Transfer all the cooked beans to a serving plate. Spoon some of the heated peanut sauce from step 3 over the beans, using as much as desired, and sprinkle with the separate optional garnish peanuts. Serve immediately as two side portions. Refrigerate unused sauce promptly in a separate container.
