Method12 steps · about 50 min
Step 1: Gather two large baking trays, a pastry brush and a mandoline with its hand guard or suitable slicer.
Step 2: Peel the malanga (12-16 ounce), rinse and pat dry.
Step 3: Slice the prepared malanga very thinly, about 1/32 inch (0.8 mm), using the slicer guard. Thick slices stay chewy rather than crisp.
Step 4: Put racks in the middle and lower third of the oven. Preheat to 325°F (163°C).
Step 5: Brush a thin layer of olive oil onto each tray, using about one tablespoon per tray, two tablespoons total.
Step 6: Arrange the sliced malanga chips on the baking sheets without overlapping.
Step 7: Brush the remaining two tablespoons olive oil thinly over the chip tops across both trays.
Step 8: Bake for 15 minutes.
Step 9: Rotate the pans (top to bottom, bottom to top)
Step 10: Bake for another 10-15 minutes or until the malanga chips are lightly golden and crispy. Check them after 7-8 minutes or so. Once they start to dry and crisp they will brown very quickly. Turn the oven light on and keep an eye on them.
Step 11: Remove the lightly golden crisp chips and immediately sprinkle the quarter teaspoon salt over the whole batch.
Step 12: Serve and enjoy! Makes approximately 70-80 chips.
