Step 1: Wash the samphire (230 g) and break large pieces into smaller strands. Choose one method: fry using steps 2–4, boil using steps 5–8, or steam using steps 9–11.
Step 2: For the fried method, melt the measured unsalted butter (2 tbsp) in a large frying pan over medium heat.
Step 3: When the prepared butter foams, add the prepared washed samphire and cook for 3–4 minutes until just wilted.
Step 4: Season the fried samphire with the measured pepper (½ tsp) to taste and serve immediately.
Step 5: For the boiled alternative, bring separate water to a boil in a lidded saucepan and add the prepared washed samphire.
Step 6: Cover and boil for 2 minutes, then drain the cooked samphire.
Step 7: Melt the measured butter (2 tbsp) in the empty saucepan and stir in the prepared hot drained samphire.
Step 8: Season the buttered boiled samphire with the measured pepper (½ tsp) to taste and serve.
Step 9: For the steamed alternative, put about 2 cm (¾ inch) of boiling separate water in the steamer.
Step 10: Put the prepared washed samphire in the steaming basket and cover.
Step 11: Steam for 2 minutes, then season the steamed samphire with the measured pepper (½ tsp) to taste and serve.
