Step 1: Put the 100 g Arborio rice and all 1200 ml milk into a large heavy-bottomed saucepan. Add the optional orange zest or lemon peel if using. Heat over medium heat while stirring constantly, until just below boiling; avoid a vigorous boil.
Step 2: Reduce to medium-low heat and gently cook for 30–40 minutes, stirring regularly and scraping the bottom so the milk does not burn or the rice stick. Continue until the rice is tender and the pudding thick and creamy; lower the heat if it bubbles vigorously. Remove any large lemon-peel strips before serving.
Step 3: Remove the tender creamy pudding from the heat. Add all 60 g sugar and ½ tsp vanilla extract and stir until the sugar has dissolved.
Step 4: If the pudding already has the desired thickness, omit both optional slurry supplies and continue. If extra thickening is needed, dissolve the 1 tsp cornstarch in a little slurry water, stir it into the pudding and return to gentle heat for a few minutes, stirring until thickened.
Step 5: For immediate warm serving, continue to portioning. For chilled serving, transfer the finished pudding to a large bowl set over a separate bowl of cooling ice. Stir the pudding until cold, keeping ice out of it to avoid dilution, then spoon into four individual bowls and refrigerate.
Step 6: Serve four portions of the pudding warm or chilled, with a sprinkle of the ground serving cinnamon.
