Method5 steps · about 50 min
Step 1: In a large pot over low heat, add the tablespoon of olive oil (1 tbsp), all 5 minced garlic cloves and the chopped onion (1). Add the diced yellow bell pepper (1). Stir gently, keeping the heat low so the garlic does not burn.
Step 2: Add all 3 diced large tomatoes, the diced eggplant (1) and both diced zucchini (2) to the garlic, onion and pepper in the pot. Stir gently with a wooden spoon.
Step 3: Season the complete vegetable mixture with salt to taste and all 1½ tsp dried Herbes de Provence. Stir to distribute them.
Step 4: Let the seasoned vegetables simmer over low heat, with the lid partly covering the pot, for about 20 minutes. Stir gently as needed and check that the vegetables are tender but still hold their shape; continue gently if they are not ready. The tomatoes and other vegetables supply the cooking juices.
Step 5: Serve the ratatouille warm, divided into four portions as a vegetable side dish.
