Idli Recipe (Idli Batter Recipe with Pro Tips)
From the zcook collection
Sixteen steamed idlis from the author’s first formula: ½ cup urad dal with rice or idli rice-rava. Allow six hours soaking and overnight fermentation, typically 8–14 hours, before steaming. The total uses twelve hours fermentation as a planning estimate.

Step 1: Use the first formula: ½ cup urad dal with 1 cup idli rice, or 1 cup plus 2 tbsp idli rice-rava instead of rice. Choose either 2 tbsp poha or ½ tsp fenugreek seeds. Put dal and chosen fenugreek in one bowl and the chosen rice or rava in another. This makes one batch.
Step 2: Rinse the selected dal and grain separately until water is clear. Soak in separate bowls of ample fresh water at least 6 hours.
Step 3: Poha route only: rinse and soak the 2 tbsp poha in its separate ¼ cup water for 30 minutes before blending. Skip if using fenugreek instead.
Step 4: After 6 hours, drain the water from both the bowls.
Step 5: Put the drained soaked dal and any chosen fenugreek into the blender with the optional soaked poha and ½ cup cold dal-grinding water. In a cool climate add the batch ½ tsp salt now; if deferring salt until after fermentation, omit it here.
Step 6: Blend to a thick, smooth, bubbly batter without letting it become hot. Add only the separate extra 2–4 tbsp cold water if too thick; do not add the rice-grinding water.
Step 7: Salt is added once: if omitted from the batter, keep the same ½ tsp for step 16. If already added, do not add it again.
Step 8: Transfer urad dal batter to a large bowl.
Step 9: Prepare only the selected grain. RICE: grind the drained soaked rice with its ½ cup grinding water to a slightly coarse, semolina-like batter. RICE-RAVA: omit that grinding water; drain and squeeze the soaked rava thoroughly until no excess water remains.
Step 10: Combine the chosen grain preparation from 9 with the frothy dal batter from 8.
Step 11: Mix the combined batter thoroughly with clean hands. It should be thick but pourable; add a little separately listed consistency water only if needed.
Step 12: Warm-place route only: cover loosely and leave in a warm place 8–14 hours until doubled, airy and bubbly. It can take up to 18 hours in colder conditions. Skip equipment route 13 and continue to 14.
Step 13: Equipment route only: skip 12. Choose the oven with its light on, or preheat to 120°F(50°C) for 10–12 minutes, turn OFF the heat and put the loosely covered batter inside. Alternatively use a suitable yogurt-low appliance setting 6–12 hours, or until the batter doubles. Do not put the batter in a very hot oven or seal its fermentation container airtight.
Step 14: Continue only with the chosen fermented batter once risen, light and bubbly, before it becomes excessively sour. Refrigerate any batter you are keeping for later promptly after fermentation.
Step 15: Bring the separate steaming water (1.5 cup) to a rolling boil. For Instant Pot use 1½ cups in its insert on Sauté; for an ordinary steamer use its required water level. This water stays below the molds and is separate from all batter water.
Step 16: Lightly grease the molds with the separately listed oil. If salt was deferred, mix the batch ½ tsp into the batter now. Stir the fermented batter gently just once or twice and fill the molds without flattening the aeration.
Step 17: Place the filled stand in the actively steaming water, cover and steam regular idlis 10 minutes over medium-high heat. For Instant Pot, press Cancel, place the stand, set the lid vent to VENTING and use Steam for 10–12 minutes with an external timer. Confirm the idlis are set; do not pressure-cook with a sealed vent.
Step 18: Turn off and wait 2 minutes before removing the stand. Then cool the idlis 2–3 minutes more; their tops should be set rather than wet.
Step 19: Loosen with a spoon and remove the cooled idlis. Serve with prepared chutney or sambar, optionally topping with a little separately listed ghee.
