Step 1: Strip the collard leaves from their tough stems.
Step 2: Wash the leaves several times in cold water to remove dirt and grit. You may add a little of the separate washing salt if desired; discard this washing water.
Step 3: Rinse the leaves well in clean cold water and set aside.
Step 4: Heat 1 tbsp olive oil in a large pot and sauté ½ diced onion and the 3 diced garlic cloves until tender.
Step 5: Add 3 cups chicken broth, 1 tsp red-pepper flakes and the fully cooked smoked turkey leg (1). Bring to a boil, then simmer gently for 20–30 minutes to flavor the broth.
Step 6: Add the collard leaves. Cover and simmer gently for 45–60 minutes, until tender to your preference; avoid a hard boil as they wilt down.
Step 7: Taste and, if desired, add a little salt, black pepper, vinegar or hot sauce. Serve the greens with their prepared broth and smoked turkey.
