Step 1: Soak the dried shiitake mushrooms (4) with 200 ml of water in a fridge for 8-10 hours. (Soak the mushrooms night before) *1
Step 2: Squeeze each mushroom over its soaking bowl, saving the broth. Remove and discard the tough mushroom stems.
Step 3: Finely slice the prepared mushrooms, onion (1/2), carrot (1/2) and konjac (100 g). Chop a small amount of green shallots and reserve them for the end.
Step 5: Heat the olive oil (1 tbsp) in a frying pan and cook the onion until it's translucent.
Step 6: Add the sliced mushrooms, carrot and konjac and cook with the onion. Keep the chopped green shallots reserved.
Step 7: Add the okara (150 g) and cook until it becomes crumbly.
Step 9: Keep stirring everything together over low heat until the liquid evaporates.
Step 11: Serve as a side dish, or cool promptly and store in an airtight container in the refrigerator or freezer.
