  1. Step 1: Mix chicken with oyster sauce (1 Tbsp), soy sauce (1 Tbsp), Golden Mountain Sauce (1 tsp), fish sauce (1 tsp), white pepper (¼ tsp), and black pepper (¼ tsp). Set aside while you fry garlic.

Uses 500 g chicken breast or thigh, cut into 1-cm thick slices · 1 Tbsp oyster sauce · 1 Tbsp soy sauce · 1 tsp Golden Mountain sauce (or substitute regular soy sauce) · 1 tsp fish sauce · ¼ tsp ground white pepper · ¼ tsp ground black pepper

  2. Step 2: In a small pot or wok, add the garlic (8 cloves), then add just enough vegetable oil to cover the garlic. Fry garlic over low heat (gentle bubbling) until the garlic turns golden brown and the bubbling has mostly stopped, about 5 minutes. Drain garlic from oil, reserving the oil.

Fry garlic gently · 5 minUses 8 cloves garlic, chopped · enough neutral vegetable oil to cover garlic for frying

  3. Step 3: In a wok, add about 2 Tbsp of the garlic oil and heat over high heat. Pour a tablespoon or so of the remaining garlic oil into the marinated chicken and stir to lubricate. When oil is hot, add the chicken and sugar (1.5 tsp), then stir until chicken is cooked. You can add a splash of water if the chicken sticks, or if you want more sauce in the final product. You can also add a little bit more black soy sauce if you want a darker colour.

Uses 1 tsp black soy sauce · 1.5 tsp sugar · Water, as needed · sliced chicken mixed with oyster, soy, Golden Mountain and fish sauces, plus white and black pepper · about 2 tbsp reserved garlic oil for wok plus about 1 tbsp for lubricating marinated chicken

  4. Step 4: When the chicken is cooked, stir in half of the fried garlic and chopped cilantro stems (7–8 stalk), and remove from heat.

Uses 7–8 stalk cilantro stems · chicken cooked through with sugar and optional black soy and water · half of drained golden garlic

  5. Step 5: Just before serving, sprinkle over the remaining fried garlic. Serve with jasmine rice, but it can also be wonderful when added to other dishes such as pasta, noodles, salads, wraps, and omelettes!

Uses cooked jasmine rice for serving · cooked chicken tossed with cilantro stems and half fried garlic · remaining half of drained golden garlic for final topping
