Step 1: Cut the firm tofu (1 lb) into pieces and pat dry. Fry in neutral oil until the outside holds its shape, then drain. If using dense pre-fried tofu, skip frying.
Step 2: Mix the ½ lb ground pork with the filling ½ tsp salt, 1 tsp sugar, ½ tsp pepper, ⅛ tsp MSG and ¼ cup chopped onion. Slit each fried tofu piece through the centre and carefully stuff with this filling without bursting the tofu.
Step 3: Quarter the tomatoes and put them in a pot with the stuffed tofu, 1 tbsp tomato paste, ½ tsp fish sauce, the sauce 1 tsp salt and 2 tsp sugar, and ½ cup water.
Step 4: Bring to a boil, then reduce to a gentle simmer on low. Simmer about 10 minutes until the tomatoes soften and the pork filling is fully cooked, reaching 160°F (71°C) in the centre. Carry out step 5 during this simmer.
Step 5: During the simmer, stir midway for even cooking and add chopped green onion (1 stalk) in the final few minutes to soften. When the pork is cooked through, serve with optional cooked rice and chili flakes (to taste).
