  1. Step 1: Slice the larger ripe tomatoes (1 kg). Halve or chop any cherry tomatoes in your chosen 1 kg tomato mixture.

Uses 1 kg fresh ripe tomatoes, mixed sizes and colours if desired

  2. Step 2: Drain the mozzarella. Cut the 250 g buffalo mozzarella into thick slices and keep the 100 g baby bocconcini for the centre of the plate.

Uses 250 g buffalo mozzarella (about 2 balls) · 100 g bocconcini di mozzarella (baby mozzarella)

  3. Step 3: Overlap the prepared tomato and buffalo-mozzarella slices around the outside of a serving plate. Fill the centre with any chopped cherry tomatoes and the drained baby bocconcini, using all the prepared tomatoes and both cheeses.

Uses prepared ripe tomatoes · sliced buffalo mozzarella and drained bocconcini

  4. Step 4: Tear the large handful of basil over the arranged salad. Drizzle with extra virgin olive oil and season with sea salt flakes and freshly ground black pepper to taste. Serve.
