Method9 steps · about 30 min
Step 1: Pat the prepared cod cheeks (1 kg) dry, especially after defrosting. Beat the eggs (2) and put the plain flour (200 g), beaten eggs and panko in three separate bowls.
Step 2: Mix the salt (1½ tsp) and pepper (1 tsp) into the prepared plain flour bowl.
Step 3: Coat each prepared dry cod piece in the seasoned flour, shake off excess, then dip in the prepared beaten eggs and finally the panko. Choose either the deep-fried method in steps 4–7 or the oven-only alternative in step 8.
Step 4: For the deep-fried option, heat the frying oil to 160°C (320°F).
Step 5: Fry the prepared breaded cod in small batches without overcrowding the basket; about six pieces may fit, depending on the fryer size.
Step 6: Cook each frying batch for about 2–4 minutes until golden and the fish is opaque and flakes easily. Lift out and drain on kitchen paper.
Step 7: Keep the fried drained fish warm in an oven at 180°C (356°F) while frying the remaining batches.
Step 8: For the oven-only alternative, skip the deep-frying steps and use the uncooked breaded fish from step 3. Line a tray with parchment or a silicone mat. Bake at 200°C conventional (392°F) or 180°C fan for about 20 minutes, turning halfway, until the fish is opaque and flakes easily.
Step 9: Serve the cod cooked by the chosen method with lemon (1) wedges and chopped parsley (2 tbsp).
