Step 1: Heat the oven to 180 °C / 160 °C fan/gas 4. Grease a wide, shallow 1.7-litre ovenproof dish with the separate greasing butter.
Step 2: Put the 100 g softened pudding butter, 175 g pudding muscovado sugar, both eggs (2 large), all the flour, baking powder (1 tsp), bicarbonate of soda (1 tsp) and three tablespoons pudding treacle into a mixing bowl. Beat with an electric handheld whisk for about thirty seconds, until combined.
Step 3: Gradually pour all the milk (275 ml) into the combined pudding mixture and whisk until smooth. Pour the full batter into the greased dish.
Step 4: Bake at 180 °C / 160 °C fan for thirty-five to forty minutes, until well risen and springy in the centre.
Step 5: Put the separate sauce ingredients into a saucepan: 100 g butter, 125 g muscovado sugar, one tablespoon black treacle, 300 ml double cream and the vanilla extract (1 tsp). Stir over low heat until the butter melts and the sugar dissolves. Bring to a boil and stir for one minute.
Step 6: Pour half of the prepared toffee sauce over the baked pudding in its dish. Cut into portions and serve warm with double cream or the optional ice cream, as desired. Offer the remaining half of the sauce alongside.
