Step 1: Mix 7 oz tofu, 10 oz ground beef, ½ cup panko, ½ teaspoon salt and pepper to taste very thoroughly in a bowl. Divide into 4 equal portions and shape into oval patties.
Step 2: Heat 1 tablespoon oil in a frying pan over medium-high heat. Add the prepared patties and fry for 4–5 minutes. Turn them, lower the heat, cover and cook for another 4–5 minutes. Check the thickest centre of each patty and continue cooking as needed until a thermometer reads 71°C (160°F). Mix the sauce during this cooking.
Step 3: While the patties cook, whisk together 2 tablespoons each soy sauce, mirin (2 Tbsp) and sake (2 Tbsp), 3 tablespoons water and 1 teaspoon cornstarch in a small bowl until the starch is dispersed.
Step 4: Add all the mixed sauce to the pan with the fully cooked patties. Bring the sauce to a bubbling simmer, turning the patties gently, and cook until the sauce thickens and coats them. Divide the patties between 4 plates and garnish with thinly sliced green onions to taste.
