Step 1: Preheat the oven to 190°C,gas 5. Grease a 23 cm round springform tin with a little separate greasing oil.
Step 2: Wash the large orange (1 large) thoroughly. Cut away the hard stem and blossom ends, then slice the orange and remove every seed. Keep the edible peel with the prepared fruit.
Step 3: Purée the prepared orange with its peel in a food processor. Add one-third of the measured sugar (300 g),100 g, and all 75 ml olive oil, then process until well combined.
Step 4: Sieve all 280 g plain flour and the tablespoon baking powder (1 tbsp) together into a bowl.
Step 5: Beat all four eggs with the remaining 200 g caster sugar using an electric mixer for at least five minutes, until very fluffy. Gently fold in half the sifted flour mixture, then all the orange mixture and both teaspoons vanilla extract (2 tsp), then the remaining half of the same flour mixture.
Step 6: Finish folding only until the cake mixture is evenly combined, without overmixing.
Step 7: Pour all the cake mixture into the greased tin and smooth its surface. Bake in the preheated 190°C oven for twenty minutes.
Step 8: Reduce the oven to 160°C,gas 2 and bake the same cake for another thirty minutes, continuing until golden brown and a skewer inserted in the centre comes out clean. Let the cooked cake stand briefly until safe to release from the tin, then remove the springform ring and base and cool on a wire rack.
