Method8 steps · about 1 hr 50 min
Step 1: Mix 200 ml lukewarm dough water, 7 g active-dry yeast and 1 tsp sugar and stand for 5 minutes until bubbly. Sift 300 g dough flour with 1 tsp salt, add 1 tbsp olive oil and the yeast mixture. Knead for about 5 minutes at the mixer manufacturer’s recommended dough speed, or about 10 minutes by hand, until smooth and no longer sticking. Add a little extra flour only if too soft, or extra water only if too stiff.
Step 2: Shape a uniform log, cut it into thirds, then cut each third into 5 equal pieces, giving 15 total. Shape each into a round roll with its seam underneath.
Step 3: Line a baking sheet or suitable round baking pan with parchment or a silicone baking mat.
Step 4: Beat the one large egg and mix with an equal volume of additional water to make egg wash. Set out the optional toppings separately; the 200 ml dough water has already been used in the dough.
Step 5: Dip each roll top once into the prepared egg wash, then into its chosen pumpkin-seed or poppy-seed topping. For rolls chosen for Gruyère, sprinkle shredded cheese on the washed top instead. Untopped rolls are also fine; do not repeat the egg-wash dip as a second stage.
Step 6: Arrange on the lined baking sheet or pan with about 1.25 cm /½ inch gaps. Cover loosely with a clean towel and rise in a warm spot for about 1 hour until doubled. Begin preheating the oven near the end of the rise.
Step 7: Preheat the oven to 190°C /375°F before the proved rolls go in.
Step 8: Mist the rolls generously with separate cold water using a food-safe spray bottle, then put the tray on the middle rack and immediately close the oven door. Bake for about 20 minutes until golden and cooked through. Transfer to a cooling rack. This makes 15 plain slider buns to serve as bread or fill with already prepared sandwich components of your choice.
