Step 1: Put all the flour (1 cup), both eggs (2), all the milk (1 cup) and water (¾ cup), the pinch salt and the teaspoon sugar (1 tsp) in a large bowl. Mix with a hand mixer until smooth and free of lumps.
Step 2: Melt the three tablespoons butter gently and hold it in a small bowl. Use this butter only to grease the pan before each pancake, keeping it separate from the batter and dividing it across the batch as needed.
Step 3: Heat a nonstick frying pan over medium heat and lightly grease it with a little of the actual melted butter. Pour in enough of the actual batter for one thin pancake, swirling the pan to spread it evenly over the base.
Step 4: Cook the actual pancake until its top is no longer wet and its edges begin to release from the pan. Turn it carefully and cook the second side briefly until lightly golden and the egg batter is fully set throughout.
Step 5: Transfer the actual cooked pancake to a plate. Repeat the same greasing, thin pouring and two-sided cooking process with the actual remaining batter, using a little of the held melted butter before each pancake, until all the batter is cooked. Stack the cooked pancakes as you go.
Step 6: Serve the actual pancakes warm as they are, or with the optional ready-to-eat filling of your choice. Roll or fold the cooked pancakes as desired; any filling is a separate serving choice.
