Step 1: Place pork ribs (800 gram) and water (2 liter) in a soup pot and bring to a boil. Keep removing the scum until the soup is clear.
Step 2: Once the soup is clear, add angelica root (10 gram), lovage rhizome, garlic (1 head), cinnamon, star anise (1), and cloves (5). Season with dark soy sauce (2 tablespoon), soy sauce, salt (2 teaspoon), and sugar (1 teaspoon). Once it boils again, reduce heat, cover the pot with a lid, and simmer for 1 hour, or until the pork is cooked and tender.
Step 3: Blanch the ready fried tofu in a separate pot of hot water, drain and cut into bite-sized pieces. Add the tofu, prepared shiitake (8) and goji berries (1 tablespoon) to the soup. Bring back to a boil and cook for another 10 minutes, until the mushrooms are cooked. Taste and add extra salt or sugar only if needed.
Step 4: Slice the green and red Thai chillies and mince the 3 dip garlic cloves. Mix them with the separate 3 tbsp light soy sauce. Turn off the soup heat and serve hot with this dipping sauce and optional ready steamed rice or you tiao.
