Method13 steps
Step 1: Preheat the oven to 180°C (350°F). Have the onion diced, garlic minced and canned beans drained before heating the pan.
Step 2: Heat the tablespoon filling oil (1 tbsp) in a large skillet over high heat.
Step 3: Add the diced onion (1) and minced garlic (2) to the oil from step 2. Cook, stirring, until the onion is translucent.
Step 4: Add all the lean ground beef (400 g) to the onion-and-garlic pan from step 3. Break it into small pieces while browning. About halfway through browning, stir in the ready taco seasoning (28 g) and the half teaspoon filling black pepper. Cook the beef through to at least 71°C (160°F).
Step 5: Add the tomato passata (700 g), half-cup water (½ cup) and drained kidney beans to the beef pan from step 4. Simmer for about five minutes, stirring occasionally, until thickened but still very saucy. Remove from the heat.
Step 6: Lay one tortilla in a 24 cm pie dish. Use a slotted spoon to spread just under half of the meat-and-bean solids from step 5 over it. Let excess sauce drain back into the skillet, keeping that sauce for the top.
Step 7: Cover the first layer from step 6 with another tortilla and cut or torn pieces from a third tortilla to fill any gaps. Keep unused tortilla pieces for the top layer.
Step 8: Spread the remaining meat-and-bean solids from the skillet in step 5 over the middle tortilla layer from step 7, again draining excess sauce back into the skillet.
Step 9: Cover the second filling layer from step 8 with the remaining tortilla and unused pieces. Pour all the sauce and any residual filling left in the skillet from step 5 over the top.
Step 10: Bake the assembled pie from step 9 for twenty minutes. Put the pie dish on a baking tray if needed to catch spills.
Step 11: Cover the partly baked pie from step 10 with all the corn chips, then scatter over all the mozzarella (1 cup). Bake for another ten to fifteen minutes, checking from ten, until the chips are lightly golden, the cheese is melted and the pie is heated through to 74°C (165°F).
Step 12: If using the pico de gallo, combine its diced avocado (½), deseeded tomato (1 large), red onion (¼), lime juice (2 tbsp), cilantro (3 tbsp) and separate half tablespoon olive oil in a bowl. Toss and season with its salt and pepper to taste.
Step 13: Serve the hot nachos pie from step 11 with the optional pico de gallo from step 12 and sour cream on the side. Cut into six portions.
