Sup Brenebon: Soup with Beef & Kidney Beans
From the zcook collection
Brenebon soup is a Dutch-influenced kidney beans soup, with a meat stock as its base. The dish originates in Manado, where pig’s trotters are used for the broth. Our version is the halal Javanese one, using beef ribs.

Method9 steps · about 1 hr 45 min
Step 1: Put the beef ribs (500 g) in a deep cooking pan with the 2 l water. Add ginger (2 cm), cinnamon, whole cloves (4), nutmeg (0.5 tsp) and 1 knotted celery stalk. Bring to a boil over medium-high heat; do not wash raw beef.
Step 2: When the soup boils, lower the heat to medium low, cover the pan (slightly open the cover) and simmer the soup.
Step 3: Meanwhile, heat either 2 tbsp olive oil OR 1 tbsp butter/margarine in a separate pan. Sauté the sliced shallots (9) and garlic (3 cloves) until fragrant, around 3 minutes.
Step 4: Add the sautéed shallots and garlic to the soup.
Step 5: Add the white pepper and salt to taste (to taste), plus the pinch of sugar if desired.
Step 6: Continue simmering until about 80 minutes have elapsed since the soup first boiled and the ribs are nearly tender.
Step 7: Add the drained canned kidney beans and carrots (2) and simmer for about 8 minutes.
Step 8: Add the tomato (1), spring onion (1) and remaining 2 sliced celery stalks. Simmer for about 2 minutes, until the ribs and carrots are tender.
Step 9: Turn off the heat and cover the pan. Let the soup rest for a while before serving.
