Step 1: Put the 60 ml cold water in a small container. Sprinkle the gelatine powder (6 g) over it and leave for about 5 minutes, until soft and spongy.
Step 2: Mix the bloomed gelatine into the hot black coffee (250 ml) until completely dissolved, with no lumps. Choose the glass method in steps 5–6 or the cubed method in steps 7–11 for this batch.
Step 3: Combine the cream (150 ml) and sugar in a bowl. Use 10 g sugar, or 15 g if you prefer a sweeter cream.
Step 4: Whip the cream only until slightly thickened but still pourable, a little thinner than cream soup. Refrigerate it while the jelly sets.
Step 5: Glass method only: divide the coffee mixture between 2 or 3 short glasses and refrigerate for at least 3 hours, until set. Skip steps 7–11.
Step 6: Glass method only: pour the sweetened cream over the set coffee jelly. Garnish with chopped strawberries or shaved chocolate and mint leaves if desired, then serve.
Step 7: Cubed method only: skip steps 5–6. Choose a container about 9 × 15 cm / 3½ × 6 inches, or a similar surface size, at least 3 cm / 1³⁄₁₆ inches deep.
Step 8: Cubed method only: pour the coffee mixture into the container, aiming for a layer about 2.5 cm / 1 inch deep. Refrigerate for at least 3 hours, until set.
Step 9: Cubed method only: score the set jelly in a grid at intervals of 2–2.5 cm / ¾–1 inch.
Step 11: Cubed method only: divide the jelly cubes between 2 or 3 serving glasses. Pour over the sweetened cream and garnish with strawberries or shaved chocolate and mint if desired, then serve.
