Method9 steps · about 50 min
Step 1: Preheat the oven to 350°F (about 177°C). Have an 8-inch baking dish ready.
Step 2: Peel and core all six apples, then cut them into medium chunks, roughly 10 chunks per apple. Avoid very small pieces that collapse into applesauce or oversized pieces that stay dry.
Step 3: Put all the prepared apple chunks in the 8-inch baking dish and drizzle the ¼ cup water evenly over them.
Step 4: Sprinkle all the cinnamon (1 tsp) and fine salt (½ tsp) evenly over the apples.
Step 5: In a small bowl, mix all the flour (¾ cup) and sugar (1 cup) together.
Step 6: Add the room-temperature butter (⅓ cup) to the flour and sugar. Mash with the back of a fork into a chunky paste with plenty of crumbs.
Step 7: Spread all the crumbly topping over the prepared apple layer.
Step 8: Bake at 350°F (about 177°C) for about 40 minutes, until the topping is golden brown, the apples are tender and their juices are bubbling.
Step 9: Divide the baked crisp into six portions. Serve with vanilla ice cream if desired, and offer Pedro Ximénez sherry alongside if using the suggested pairing.
