Step 1: Heat the oven to 190°C conventional, 170°C fan or gas 5. Mix the 120 g plain flour with only the 60 g caster sugar in a bowl.
Step 2: Add only the 60 g room-temperature topping butter. Rub it into the flour-and-sugar mixture with your fingertips until it forms light crumbs, without overworking it.
Step 3: Spread the mixed crumble crumbs evenly on a baking sheet. Bake for about 15 minutes, until lightly golden.
Step 4: While the topping bakes, peel and core the 300 g apples and cut them into 2 cm pieces. Keep the diced apples aside. In a saucepan over medium heat, melt only the 30 g compote butter with the 30 g demerara sugar.
Step 5: Stir the melted compote butter and demerara sugar over medium heat for about 3 minutes, until lightly caramelised. Add the reserved diced apples and cook for another 3 minutes.
Step 6: Add the 115 g blackberries and ¼ tsp ground cinnamon to the cooking apple mixture. Stir gently and cook for another 3 minutes.
Step 7: Cover the fruit pan, take it off the heat and leave it for 2–3 minutes to finish softening in the retained warmth.
Step 8: Spoon the warm rested fruit into an ovenproof gratin dish and scatter all of the baked crumble topping over it. Return to the same oven for 5–10 minutes, until heated through. Serve with vanilla ice cream if desired.
