Step 1: Put all four boneless chicken thighs, cut into bite-sized pieces, in a bowl. Add all 2 tbsp soy sauce, 1 tbsp sake, 1 tbsp mirin, 1 tsp sesame oil, 4 minced garlic cloves, 2 tsp minced ginger, ½ tsp salt, ½ tsp white pepper and the beaten egg white (1). Mix until the chicken is evenly coated.
Step 2: Cover the chicken and its marinade and refrigerate for at least 1 hour, or overnight if preferred.
Step 4: Heat enough neutral oil for deep-frying. Dredge the earlier marinated chicken pieces in potato starch, shaking off loose excess, and fry in batches for about 5–6 minutes until golden and crisp. Check the thickest pieces reach 74°C (165°F) in the centre, continuing as needed for their actual size. Drain the fully cooked pieces before tossing; coating adherence and frying-oil uptake are variable.
