Step 2: Blend to a slightly coarse thick paste. For the no-blender alternative, mince the same garlic and mix with chili powder instead of whole dried chilies, using the same remaining sauce ingredients and water. Do not add a second color-powder dose.
Step 3: Heat the 1–2 tbsp cooking oil or chosen butter. Add only ½ tsp cumin seeds OR one mace strand.
Step 4: Wait for 30 seconds, add onions (0.5 cup) and saute until golden. While the onions fry, rinse & slice the mushrooms (1.5 cup).
Step 5: Add the sauce prepared at 2 to the golden onion base and sauté 2–3 minutes over low to medium heat without burning.
Step 6: Continue with the same sauce until the raw garlic smell is gone and it smells aromatic.
Step 7: Add the same mushrooms rinsed and sliced at 4; sauté 2–3 minutes to coat in the cooked sauce.
Step 8: Cover and cook on a medium to low heat until the mushrooms are cooked to your liking.
Step 9: Transfer the cooked garlic mushrooms to a plate and garnish with the separate small raw onion (1) and chopped coriander leaves (2 tbsp).
Step 10: Serve the finished mushrooms as a side or sandwich/wrap filling.
Step 11: Optional alternative: toss separately listed ready cooked rice, noodles or spaghetti in the same cooked mushrooms and heat through. Do not add dry grain or a fresh garlic supply.
