Step 1: Place the tofu (300 g) in a bowl and whisk it to break it apart and make it into a paste.
Step 2: Add the panko to the bowl and mix with the tofu.
Step 3: Heat a little oil in a small frying pan. Cook the finely chopped onion over low to medium heat until browned, then let it cool.
Step 4: Add the cooked onion to the tofu and panko mixture.
Step 5: Add the veal-and-pork mince (300 g), egg (1), salt (1/4 tsp), pepper (1/4) and a small amount of ground nutmeg of your choice. Mix well.
Step 6: Shape the mixture into eight even-sized patties. Fry them in a lightly oiled frying pan over medium to medium-high heat, turning as needed, until the centres reach at least 71°C (160°F) on a food thermometer. Adjust the heat if the outside browns before the middle cooks.
Step 7: While the patties cook, combine the ⅓ cup mentsuyu and 1 cup sauce water in a small saucepan over medium heat. These are the broth ingredients; keep the potato starch and its separate 2 tablespoons water for the slurry in step 9.
Step 8: Bring the sauce to simmer and add mushrooms to cook for a few minutes.
Step 9: Mix the 2 tablespoons potato starch with the separate 2 tablespoons slurry water in a small bowl until smooth.
Step 10: Add katakuriko mixture to the saucepan and stir through the mixture to make the sauce thicker.
Step 11: Serve the eight fully cooked patties as four servings with any chosen sides, and drizzle the cooked mushroom sauce over them.
