Step 1: In a pot over medium heat, heat oil (2 tablespoons). Add potatoes (1) and cook, stirring occasionally, until lightly browned. Remove from pot and drain on paper towels.
Step 2: Add onions (1), garlic (2 cloves), and ginger (1) and cook until softened.
Step 3: Add baby back ribs (2 pounds) and cook, turning occasionally, until lightly browned.
Step 4: Add pineapple juice (1 cup), soy sauce (1/4 cup), pineapple tidbits (1 cup), and water. Bring to a boil, skimming scum that floats on top.
Step 5: Lower the heat, cover and simmer for about 1 1/2–2 hours, until the ribs are fork-tender. Add more water in 1/2-cup increments as needed to prevent the braise from drying out.
Step 6: When the ribs are tender, return the lightly browned potatoes and add the raisins (2 tablespoons). Continue cooking until the potatoes are tender.
Step 7: Season with salt and pepper (to taste) to taste. Serve hot.
