  1. Step 1: Peel and devein the 5 oz shrimp, using medium shrimp if possible so they cook evenly. Mix with the 1 tsp cornstarch; no additional water is needed when the shrimp are already damp. Keep chilled while preparing the noodles and vegetables.

Uses 5 oz shrimp · 1 tsp cornstarch

  2. Step 2: Thinly slice the 3 oz onion and cut the 1/2 oz green onion into 1 1/2-inch pieces.

  3. Step 3: Spread the 1 lb fresh flat rice noodles on a cutting board. Gently massage and separate them for about 60–90 seconds to break up compressed clumps without tearing the noodles.

  4. Step 4: Heat a suitable uncoated wok over high heat for about 3–5 minutes until very hot. Add the 1 tbsp vegetable oil and swirl to coat the cooking surface.

  6. Step 6: Add the additional vegetable oil as needed, then the sliced onion. Cook for 20–30 seconds until fragrant. Add the separated fresh rice noodles and gently toss or flip with chopsticks so they begin to turn slightly golden. Cook for about 4 minutes before starting the next step; the total noodle-cooking time across both steps is about 9–10 minutes.
