Step 3: Heat up the oil for deep frying on a medium heat.
Step 7: Test the same heated frying oil with a tiny portion of the existing batter. It should sizzle and rise without browning immediately.
Step 11: Optional: refry the same once-fried florets in the existing frying oil for extra crispness, then drain. Otherwise retain the once-fried florets from step 10.
Step 12: Optional sauce-color paste only: mix the separate ½ tsp sauce chili with its separate 1 tbsp water. Omit if no color powder is wanted.
Step 13: Choose one sauce style. DRY: mix the base 1 tbsp soy, 2–3 tbsp red chili sauce (or chosen hot-and-sweet substitute), optional 1–2 tbsp ketchup, 1 tsp sugar, ½ tbsp vinegar and optional color paste from 12. SEMI-DRY: use twice those base sauces/sugar/vinegar, adding the separately listed extra doses; optionally double sauce-color chili. Separately mix only 1 tsp slurry starch with ½ cup slurry water. gravy: use three times the base sauces/sugar/vinegar, with the separate extra doses; use two to three times sauce-color chili according to heat preference. Separately mix only ¾ tbsp slurry starch with 1 cup slurry water. Do not combine styles or use batter starch for slurry.
Step 14: Heat the separate fresh 1½ tbsp sauce oil in a wide pan; do not reuse the deep-fry oil. Sauté garlic (1 tbsp), ginger (0.5 tbsp) and optional green chili (1) 1–2 minutes without burning.
Step 15: Then add spring onions (⅓ cup) whites & bell pepper (0.25 cup). Saute them on a high flame for 2 mins.
Step 16: Add the one chosen mixed sauce from 13. For DRY add only the 3–4 tbsp dry-sauce water and cook until thick. For SEMI-DRY or gravy, omit dry-sauce water and stir its matching slurry into bubbling sauce until thick. Add only the separate ½–¾ tsp finishing pepper and optional ⅛ tsp initial sauce salt, then turn off.
Step 17: Taste the cooked sauce and adjust only with separately listed extra salt, chili sauce or vinegar as needed. It should be slightly tangy, sweet and hot.
Step 18: Cool the sauce 1–2 minutes, then toss in only the same drained once-fried florets from 10 OR the optional refried florets from 11. Coat gently just before serving.
Step 19: Garnish gobi manchurian with spring onion greens (2 tbsp). Serve immediately as a appetizer or as a side with noodles or fried rice.
