Step 1: Slit the 2 ready-baked Koppe Pan rolls down the middle without cutting through their bottoms. Thinly slice the ½ cup cabbage and the already hard-boiled egg (1). Choose one sauce option: use ready bottled yakisoba sauce, OR mix all 3 tablespoons tonkatsu sauce, 2 tablespoons Worcester sauce, ½ tablespoon soy sauce and ½ tablespoon mirin in a bowl. This homemade batch is larger than the 2 tablespoons needed below.
Step 2: Heat ½ tablespoon oil in a large frying pan over medium-high heat. Add the prepared cabbage, 2 tablespoons water and the 1 package ready-cooked/steamed chuka-men (1 package). Lower the heat, cover and heat for about 2 minutes until the noodles loosen and the cabbage softens. If your noodles were sold uncooked, prepare them according to their package first; this brief covered stage reheats them.
Step 3: Uncover and loosen the softened noodles. Season with salt and pepper to taste, then add EITHER 2 tablespoons bottled yakisoba sauce OR measure 2 tablespoons from the homemade sauce batch. Stir-fry for about 2 minutes until coated and fairly dry, so the filling will not make the bread soggy. Keep any unused homemade sauce separate.
Step 4: Divide all the seasoned noodles equally between the 2 prepared slit rolls. Top with aonori and benishoga to taste and a slice of the prepared hard-boiled egg on each. Any remaining egg slices can be saved separately. Serve the 2 sandwiches.
